Potatoes are such a versatile starchy veg but sometimes get a bad wrap. If cooked with health in mind, potatoes can be a nutritious addition to any meal. Potatoes are loaded with potassium, an essential nutrient which helps regulate blood pressure among many other functions in the body. The key is to steer away from the deep-fried variations and lean more towards cooking with potatoes in their natural form.
I came up with this recipe recently after becoming tired of eating plain old potatoes which can be kind of bland if not seasoned properly. This recipe is a great balance between healthfulness and taste. Give it a try and let me know what you think!

Ingredients
- 6 Small/Medium Potatoes Yukon Gold, Red, etc.
- 2 Tbsp olive oil
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Onion Powder
- 1/2 Tsp Paprika
- 1 pinch Crushed Rosemary Dried is fine, unless you have fresh

Start by cooking potatoes. This can either be done by boiling or microwaving until easily pierced by a fork. For microwaving, cook 1 min. per ounce of potato, flipping halfway through. (This is a real time saver!)

Once cooked and slightly cooled, cut each potato in half.

Heat 1 Tbsp. Olive Oil in a large skillet (10-12″) over medium-high heat.

Place potatoes cut side down, being careful not to let oil splatter.

With a potato masher or other flat instrument, flatten each potato in the pan to about a 1/2 in. in thickness.

Drizzle remaining Tbsp. of Olive Oil over potatoes followed by all of the spices.

Cook for 7-10 minutes or until browned, without flipping.

Let cool for a couple minutes and ENJOY! There you have it a great compromise between taste and healthfulness.
