  1. Start by cooking potatoes. This can either be done by boiling or microwaving until easily pierced by a fork. For microwaving, cook 1 min. per ounce of potato, flipping halfway through. (This is a real time saver!)
  2. Once cooked and slightly cooled, cut each potato in half.
  3. Heat 1 Tbsp. Olive Oil in a large skillet (10-12″) over medium-high heat.
  4. Place potatoes cut side down, being careful not to let oil splatter.
  5. With a potato masher or other flat instrument, flatten each potato in the pan to about a 1/2 in. in thickness.
  6. Drizzle remaining Tbsp. of Olive Oil over potatoes followed by all of the spices.
  7. Cook for 7-10 minutes or until browned, without flipping.
  8. Let cool for a couple minutes and ENJOY! There you have it a great compromise between taste and healthfulness.
